One of my favorite ways to enjoy Cannabis Infused Olive Oil. The balsamic reduction makes it look all fancy! Step it up with a cannabis infused mayo drizzled on top.
1 Baguette (I like to slice my thin)
1/4 cup Olive Oil (this is used to toast the bread)
1 1/4 cup chopped Tomatoes (don't forget to take the seeds out)
1/4 cup chopped Red Onion
3 cloves minced Garlic
1 tsp thyme
1/4 cup chopped Cilantro and Parsley (I'm always heavy on the cilantro)
2 tbsp chopped Basil
1/4 cup Parmesan
8 tbsp of Cannabis Infused Olive Oil
Salt & Pepper to taste
6 tbsp Balsamic Vinegar
Set oven to 400º F. Place bread on a cookie sheet and drizzle with olive oil. Sprinkle with parmesan, (keep 2 tbsp to mix in with tomatoes). Place in oven and bake until lightly toasted. Remove from oven.
Mix together the tomatoes, red onion, cilantro, parsley, garlic, parmesan, basil, thyme and cannabis infused olive oil. Let rest.
On the stove top, on low heat warm the balsamic vinegar until it is reduced to half. While the vinegar is cooking down place tomato mixture on toasted bread. Drizzle with balsamic vinegar.
